Ingredients

The ingredients are:
  • BROTH
  • 4 cups chicken stock
  • 2 cups water
  • RICE
  • 1 tablespoon butter
  • 1 cup yellow onion, minced
  • 3 garlic cloves,minced
  • 2 1/3 cups Arborio rice
  • 2/3 cups white wine
  • 1/3 cups Romano cheese, grated
  • 1 tablespoon butter
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • RADISH SALAD
  • 1 pound radish, julienned
  • 1 tablespoon chives minced
  • 1 tablespoon white wine vinegar
  • 1 tablespoon oil (olive oil)

How to Make

  • Step 1: For stock bring to a simmer will need to add it to rice in separate pot.

  • Step 2: Meanwhile in stock pot, melt butter. Add onion and move around; cook 5 minutes.

  • Step 3: Add garlic; cook 1 minute. Add rice stirring and cooking 1 minute.

  • Step 4: Add wine; cook until wine absorbed.

  • Step 5: Cook 1 cup ladle at a time the rice stirring alot water needs to absorbed before adding next cup (this will take 20 minutes, rice will be creamy ,you will have some broth left over) remove from heat.

  • Step 6: Add 1 T butter and cheese.

  • Step 7: Season with salt and pepper

  • Step 8: For radish, put everything together and serve on top of rice. Stir if not creamy add more stock.
