  • 1 1/2 pounds brussels sprouts
  • 3 tablespoons olive oil
  • 1/2 teaspoon salt (or more to taste)
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon lemon zest (optional)
  • Lemon wedges to garnish

How to Make

  • Step 1: Preheat oven to 400°F. Cut off the ends of the Brussels sprouts and pull off any yellow outer leaves. Mix them in a bowl with the olive oil, salt, black pepper and lemon zest.

  • Step 2: Transfer them to a sheet pan and roast for 35 to 40 minutes, until crisp outside and tender inside. Shake the pan from time to time to brown the Brussels sprouts evenly.

  • Step 3: Sprinkle with more salt if you like, and serve hot. Squeeze over lemon juice to garnish if you wish.
