Step 3: In the same skillet, sauté prosciutto in the drippings until browned.
Step 4: Add garlic and sage, cook 1 minute longer.
Step 5: Add vinegar, stirring to loosen browned bits.
Step 6: Stir in the whipping cream, bring to a boil.
Step 7: Reduce heat, cook and stir, for 1 to 2 minutes or until slightly thickened.
Step 8: Add tomatoes and pork, heat through.
Step 9: Sprinkle each serving with cheese.
