Ingredients

The ingredients are:
  • CRUST
  • 1 cup yellow cornmeal
  • 1 teaspoon sugar
  • 1 cup cheddar cheese, shredded
  • 1/3 cup milk
  • 2 large eggs, beaten
  • 2 teaspoons oil (vegetable oil)
  • FILLING
  • 1/2 pound ground turkey
  • 1/2 cup green bell pepper, chopped
  • 1/2 cup yellow onion, chopped
  • 1 teaspoon garlic, minced
  • 1 teaspoon jalapeno pepper, finely chopped
  • 1 can (8 ounce) tomato sauce
  • 1 cup whole kernel corn, drained
  • 2 teaspoons chili powder
  • 1 1/2 teaspoons ground cumin
  • 1/8 teaspoon cayenne pepper
  • 1 cup cheddar cheese, shredded
  • Side
  • Sour cream
  • Salsa

How to Make

  • Step 1: Heat oven to 350°F.

  • Step 2: Combine cornmeal and sugar; stir in 1-cup cheese, milk, eggs and oil. Stir just until moistened.Press mixture on bottom and up sides of 9"pie plate sprayed with non stick cooking spray.

  • Step 3: In a 10"skillet, cook ground turkey, green peppers, onion, garlic and jalapeños over medium high heat until turkey is no longer pink.

  • Step 4: Drain. Stir in tomato sauce, corn, chili powder, cumin and cayenne.

  • Step 5: Spoon turkey mixture into cornmeal crust.

  • Step 6: Bake at 350 F, 30 to 35 minutes.Remove from oven; sprinkle with 1-cup cheese.Return to oven and bake until cheese melts.

  • Step 7: Let stand 5 minutes before serving.Serve with sour cream and salsa if desired
