  • 1 pound boneless Country style pork ribs (four 4 oz ribs)
  • 4 small yellow onion (cleaned, whole)
  • 2 medium parsnips (peeled, cut into 4 inch spears)
  • 4 medium carrots (peeled cut into 4 inch pieces)
  • 8 potatoes, cleaned (nugget)
  • 1 can (398 ml) stewed tomatoes (Mexi)
  • 1 jalapeno pepper, seeded, membrane removed, chopped
  • Salt and pepper to taste

How to Make

  • Step 1: Season the pork pieces with salt & pepper

  • Step 2: Sear the pork ribs on all sides in a lightly greased skillet

  • Step 3: Place your prepared carrots on the bottom of the crock pot

  • Step 4: Add the seared ribs

  • Step 5: Add all the remaining veggies pouring the can of tomatoes on top

  • Step 6: Turn crockpot on low for 6 hours
