  • Kosher salt and freshly ground black pepper, to taste
  • 1 large romaine lettuce, chopped (about 6 cups)
  • 1 large Roma tomato, diced
  • 3/4 cup corn kernels (canned and well drained)
  • 3/4 cup cooked black beans (canned, drained and rinsed)
  • 1/3 cup red onion, diced
  • Salt and pepper
  • 1/3 to 1/2 cup Monterey Jack cheese, shredded
  • 1/2 cup cheddar cheese, shredded
  • 1/3 cup Ranch dressing
  • 1/3 cup barbecue sauce (your favorite)
  • 1/4 cup tortilla strips
