Ingredients

The ingredients are:
  • 2 pounds potatoes (new potatoes, golf-ball sized)
  • 1 tablespoon finely chopped fresh rosemary
  • 2 sprigs fresh thyme, finely chopped
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 6 tablespoons butter

How to Make

  • Step 1: Wash potatoes (do not peel) and cut in half. Place in pan and cover with cold water.

  • Step 2: Bring to a boil, reduce heat to medium. Let cook 15-20 minutes, or just till barely fork-tender. Check after 12 minutes and keep checking every couple minutes. Do Not Overcook or they will turn to mashed potatoes. Drain well. Turn temp to very low. Add butter to potatoes in pan along with herbs and spices. Toss gently to coat. Let it heat for a few minutes, stirring occasionally to coat well, but do not let it burn.
