Ingredients

The ingredients are:
  • 3 quarts stock (game stock or beef stock)
  • 1/2 pound ground caribou meat (or other ground big game, or ground beef)
  • 1 large egg, beaten
  • 1/4 cup dry bread crumbs, or more if needed
  • 1/4 cup finely chopped onion
  • Cooked vegetables, optional

How to Make

  • Step 1: Place stock in a large pot.

  • Step 2: Bring to a simmer.

  • Step 3: Meanwhile, combine meat, egg, bread crumbs, and onion.

  • Step 4: Blend and shape into 1/2" to 3/4" meatballs. Add a few more crumbs if mixture is too wet to shape.

  • Step 5: Add meatballs to stock.

  • Step 6: Simmer for 30-45 minutes.

  • Step 7: If desired, throw in some cooked vegetables a few minutes before serving.
