Step 1: Place stock in a large pot.
Step 2: Bring to a simmer.
Step 3: Meanwhile, combine meat, egg, bread crumbs, and onion.
Step 4: Blend and shape into 1/2" to 3/4" meatballs. Add a few more crumbs if mixture is too wet to shape.
Step 5: Add meatballs to stock.
Step 6: Simmer for 30-45 minutes.
Step 7: If desired, throw in some cooked vegetables a few minutes before serving.
