Step 1: Bacon ... I do this ahead of time. You can use the oven method, microwave, or the saute pan. You can cook the whole slice; then dice. Or, dice and pan saute until crispy. Any method you feel comfortable with. Make sure to cool; and store, until ready to use. I prefer to oven bake, then dice (my favorite method).
Step 2: Eggs ... Add the eggs, cream, seasoning to a bowl, a pinch of salt and pepper; and, whisk until creamy, and a light lemony color. Bring a saute pan to medium heat; and, add the butter. Then, add the egg mixture; and, immediately reduce to medium low heat. Slowly cook the eggs, stirring often; until the eggs are soft scrambled. You want them creamy and soft. Once the eggs are set, remove from the heat.
Step 3: Avocado ... After slicing the avocado drizzle with the lemon juice; this will prevent them from turning brown.
Step 4: Quesadillas ... Lay out the 4 tortillas, and top with a heaping tablespoon of cheese on one side of the tortilla. Top with the eggs, diced bacon, and avocado slices. Then, finish with another spoon of cheese. Fold the quesadilla over; this creates a half moon. Now, it's ready to grill.
Step 5: Cook ... Bring a grill (I love an outdoor grill); but, a grill pan, or a large non-stick saute pan, to medium heat. Lightly, brush or spray the tortilla with canola or vegetable oil (or a non-stick spray); then place the oiled side down. Then, brush or spray the top of the tortilla. The oil, will allow the quesadilla to get golden brown; and a bit crispy as it cooks. Cook or grill the quesadilla for 3-4 minutes per side, on medium heat; until toasted, golden brown, and the cheese melted.
Step 6: Serve and ENJOY! ... I love to serve with a spoon of cottage cheese and sriracha. If you don't have sriracha, buy a bottle - but, a chili sauce, or good hot sauce will work as well. You could also use yogurt if you didn't have cottage cheese. Serve with a fruit salad for a great morning breakfast.
