Ingredients

The ingredients are:
  • 1 1/2 cups corn kernels
  • 1 tomato, diced
  • 4 scallions, sliced
  • 1/4 cup cilantro, chopped
  • 1/4 cup lime juice, divided
  • 2 teaspoons oil (olive oil)
  • 1 teaspoon cumin, divided
  • 1 teaspoon salt
  • 3/4 teaspoon paprika, divided
  • 1 pound raw skinless boneless chicken breasts
  • Cooking spray

How to Make

  • Step 1: Preheat grill over medium high heat

  • Step 2: In a bowl combine vegetables (corn - cilantro) and 2 tablespoons lime juice, oil and 1/4 teaspoon each of the cumin, salt and paprika. Set aside.

  • Step 3: In a small cup or bowl combine remaining 2 tablespoons lime juice, 3/4 teaspoon cumin, 3/4 teaspoon salt and 1/2 teaspoon paprika. Rub mixture over the chicken and then spray chicken with Pam.

  • Step 4: Grill chicken, turning once (10 minutes) until cooked through.

  • Step 5: Serve chicken topped with the salad
