Step 1: Preheat oven to 300° F.
Step 2: On medium-low speed, beat egg white and vanilla until foamy, about 1 minute.
Step 3: Increase speed to medium-high and whip to "soft, billowy mounds", about 1 minute.
Step 4: Gradually beat in sugar and baking soda.
Step 5: Continue to whip until light and smooth, about 2 minutes.
Step 6: Fold in pecans.
Step 7: Drop by tablespoonfuls about 1" apart on parchment-lined baking sheet.
Step 8: Bake until lightly browned, 10-12 minutes.
Step 9: Turn oven off and leave in oven 10 minutes.
Step 10: Remove from oven and let cool on sheet 10 minutes.
Step 11: Cool on racks.
