  • 1/8 teaspoon dried basil
  • Salt to taste
  • Pepper to taste
  • 1 package (10 ounce) frozen black-eyed peas (do not defrost)

How to Make

  • Step 1: Place bacon in large skillet and cook until crisp. Draih.

  • Step 2: Add onion, pepper and celery to bacon fat and cook until softened.

  • Step 3: Stir in tomatoes, sugar, bay leaf, basil, salt and pepper.

  • Step 4: Simmer 5 minutes.

  • Step 5: Add frozen peas.

  • Step 6: Cook over low heat until liquid is gone, about 30 minutes.

  • Step 7: Remove bay leaf before serving.
