Step 1: Sift flour into a bowl.
Step 2: Cut in butter.
Step 3: Mix in sour cream.
Step 4: Form into a ball, wrap, and refrigerate at least 2 hours.
Step 5: Preheat oven to 375° F.
Step 6: Beat cream cheese until soft.
Step 7: Add eggs and beat until light and fluffy.
Step 8: Mix in sour cream, butter, salt and sugar.
Step 9: Place dough on lightly flour surface and roll out to 1/8" thickness.
Step 10: Cut out in 3" circles.
Step 11: Place 2 teaspoons of cheese mixture in the center of each circle.
Step 12: Pinch sides together to form cups open at the top.
Step 13: Brush with beaten egg yolk.
Step 14: Place on baking sheet.
Step 15: Bake until lightly browned, about 20 minutes.
