Ingredients

The ingredients are:
  • 1 1/2 cups brown sugar
  • 2/3 cup oil
  • 1 large egg
  • 1 teaspoon baking soda
  • 1 cup buttermilk
  • 1 teaspoon salt
  • 1 teaspoon vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1/2 cup nuts, chopped
  • 1 1/2 cups fresh rhubarb, diced
  • Topping
  • 1/2 cup all-purpose sugar
  • 1 tablespoon butter
  • 1 teaspoon ground cinnamon

How to Make

  • Step 1: Preheat the oven to 325°F.

  • Step 2: Grease two loaf pans.

  • Step 3: Dice the rhubarb and chop the nuts.

  • Step 4: Mix everything, except the topping ingredients, together in a large bowl.

  • Step 5: Mix well and pour into prepared loaf pans.

  • Step 6: Topping: Mix the topping ingredients together and sprinkle over the top of the batter.

  • Step 7: Bake for 60 minutes, taking care not to over bake. This was in big letters so it must be a problem to watch out for lol.
