  • 6 cups beer (flat beer)
  • 1/4 cup thinly sliced scallions (white and green)
  • 1 medium cucumber, peeled and diced
  • 1/2 cup cooked beef, diced (ham or veal may be substituted)
  • 3 tablespoons finely chopped parsley

  • Step 1: Press eggs through a sieve, or chop finely.

  • Step 2: Add sour cream, mustard, salt and sugar, and beat well.

  • Step 5: Chill.

  • Step 6: Sprinkle with parsley before serving.
