Ingredients

The ingredients are:
  • SALAD
  • 4 cups mixed salad greens
  • 1 can (15 ounce) black beans, rinsed and drained
  • 2 corn ears (grilled, kernels cut off the cobs)
  • 3/4 cup matchstick-size pieces peeled jicama
  • 1 large tomato (chopped)
  • 1 small red onion, sliced thinly
  • 1 large avocado (peeled and sliced)
  • 1 fresh jalapeno pepper, stemmed, seeded, and thinly sliced
  • Tortilla chips
  • Salsa
  • Cubed cheese (of choice)
  • Chopped cooked chicken or shrimp
  • Cilantro Ranch Dressing
  • CILANTRO RANCH DRESSING
  • 2/3 cup sour cream
  • 1/2 cup buttermilk
  • 3 to 4 tablespoons chopped fresh cilantro
  • 2 tablespoon chopped fresh chives
  • 2 tablespoons lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon chili powder
  • Hot sauce (OPTIONAL)
  • 1/2 teaspoon salt (or to you taste)

How to Make

  • Step 1: Dressing: In a small bowl whisk together sour cream, buttermilk, cilantro, chives, lime juice, garlic, chili powder, salt and hot sauce. Chill until ready to use.

  • Step 2: Salad: Line a large serving platter with salad greens.

  • Step 3: In a medium bowl combine black beans, corn, jicama, tomato and red onion. Spoon mixture over greens.

  • Step 4: Arrange avocado and jalapeno pepper slices over bean mixture.

  • Step 5: Top with chips, salsa, cheese and cooked chicken or shrimp.

  • Step 6: Drizzle with Cilantro-Ranch Dressing.
