Ingredients

The ingredients are:
  • 1 zucchini, shredded (med zucchini, 1 cup. No need to peel zucchini)
  • 2 pounds ground turkey (not breast meat-too dry!)
  • 4 tablespoons tomato paste
  • 1/2 cup bread crumbs (dry, plain)
  • 1 large egg
  • 1 packet (1 ounce) dry onion soup mix
  • 2 teaspoon dried Italian seasoning (or thyme)
  • 1/2 teaspoon ground black pepper

How to Make

  • Step 1: Preheat oven to 350F. Coat a 9x5x3 inch loaf pan with cooking spray.

  • Step 2: Place all ingredients in large mixing bowl and mix thoroughly with hands.

  • Step 3: Place mixture into prepared loaf pan and pat down to remove air pockets.

  • Step 4: Bake 1 hour and 10 minutes, or until meat thermometer inserted into center reads 160F.

  • Step 5: Let stand 5 minutes.

  • Step 6: Slice and serve.
