Ingredients

The ingredients are:
  • 1 1/2 cups vegetable broth
  • 1/2 cup water
  • 1 cup cooked garbonzo beans (canned, rinsed and drained)
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 cup dry couscous (whole wheat couscous)
  • 2 oranges, seedless, peeled and diced
  • 1/4 cup parsley, chopped
  • 1 tablespoon oil (olive oil)
  • 1 tablespoon white balsamic vinegar

How to Make

  • Step 1: In a saucepan combine the first 5 ingredients (broth - pepper) and bring to a boil. Remove from heat.

  • Step 2: Stir in couscous. Cover and let stand for 5 minutes. Fluff with fork.

  • Step 3: Meanwhile in a large bowl combine the rest of the ingredients (oranges - vinegar).

  • Step 4: Stir in couscous and toss.
