Step 1: Make dressing: combine mayo, rice vinegar, mirin, soy sauce, lemon juice, and jalapeno in a small bowl and set aside.
Step 2: Prepare salad: halve the cucumber lengthwise, scrape off seeds with a teaspoon & slice the cucumber into 1/8" thick half moons.
Step 3: Place slices in a large bowl and add red and napa cabbages, radishes, arrots, red bell pepper, green onions and sesame seed.
Step 4: Pour over just enough dressing to lightly coat. Season with salt and pepper, and toss well to combine.
Step 5: Serve immediately.
