Step 1: Preheat oven to 350° F.
Step 2: Place blintzes in a buttered 9 x 13-inch pan.
Step 3: In a medium bowl, mix together sour cream, sugar, orange juice, eggs, butter, vanilla and salt. Pour mixture over blintzes.
Step 4: Sprinkle with cinnamon sugar.
Step 5: Bake, uncovered, at 350° for 45 minutes, until puffed and golden.
Step 6: Serve with sour cream on the side, if desired.
