Ingredients

The ingredients are:
  • 1/4 cup oil (canola oil)
  • 1 cup yellow onion, chopped
  • 1 cup celery, chopped
  • 4 garlic cloves, sliced
  • 1 cup dry orzo
  • 1 cup fresh spinach
  • 2 cans (15 ounces each) chicken broth (or 2 cans vegetable broth)
  • 1 can (16 ounce) red kidney beans (drained and rinsed)
  • 1 teaspoon salt
  • Pepper

How to Make

  • Step 1: In a large skillet heat oil over medium high heat, stir in vegetables (onion - garlic) and saute until tender.

  • Step 2: Cook orzo according to package directions, using broth instead of water. During last two minutes of cooking time add spinach. Drain well and place in bowl or serving dish.

  • Step 3: Stir in the beans, onion mixture, salt and pepper. Toss.
