Ingredients

The ingredients are:
  • 1 roast (2 1/2 to 3 pounds) moose
  • 1 cup pineapple juice
  • 1/2 cup hot sauce (Frank's RedHot sauce)
  • 1/4 cup oil (vegetable oil)
  • 1/4 cup soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon dried oregano
  • 1 teaspoon hot pepper flakes
  • 1/2 teaspoon dried thyme

How to Make

  • Step 1: Remove all the fat and membrane from the moose meat and cut into bite size pieces; set aside.

  • Step 2: In a large re-sealeable plastic bag add the pineapple juice, hot sauce, vegetable oil, soy sauce, brown sugar and hot pepper flakes.

  • Step 3: Place the oregano and thyme in the palm of your hand and rub to release the aroma then add to marinade.

  • Step 4: Add the meat and swish to coat the meat; place in refrigerator and marinate for at least 6 hours.

  • Step 5: Place the meat onto 8 skewers and grill until cooked to desired doneness, basting with marinade every so often.
