Ingredients

The ingredients are:
  • THE FILLING
  • 2 1/4 cups jam
  • 2 cups pitted dates, minced
  • 2 tablespoons fresh lemon juice
  • THE CRUST
  • 125 grams all-purpose flour (plus 1 tablespoon flour)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 110 grams unsalted butter (softened)
  • 2/3 cup light brown sugar, packed
  • 1 cup oats (rolled)

How to Make

  • Step 1: Heat the oven to 200C.

  • Step 2: For the filling: Simmer the jam, dates, lemon juice and 3 tablespoons of water in a medium saucepan over medium heat. Cook until dates are softened, this will take about 8 minutes.

  • Step 3: To make the Crust: Heat the oven to 200C. Stir together the flour, baking soda and salt in a bowl. In another bowl, and using an electric hand mixer, beat the butter and sugar until fluffy. Whilst beating, slowly add the flour mixture and oats and beat until crumbly dough forms.

  • Step 4: Press half the dough into the bottom of a 20cm square baking dish. Spread the filling over the crust. Crumble the remaining dough over the top. Bake until golden, about 20 minutes.

  • Step 5: Let cool completely before slicing. Store in an airtight container in the fridge
