Ingredients

The ingredients are:
  • 2 tablespoon vegetable oil
  • 2 stalks celery, chopped (about 1 cup)
  • 1 medium red pepper, diced
  • 3 garlic cloves,(fine minced)
  • 2 cups chicken broth
  • 1 can (about 4 ounces) chopped green chiles
  • 2 tablespoons tomato paste
  • 1 package (10 ounces) refrigerated fully-cooked chicken breast strips
  • 2 cups uncooked instant white rice
  • 1 package (4 ounces) chorizo sausage (chopped)
  • 1/4 cup chopped fresh cilantro leaves
  • Salt & ground pepper
  • Hot pepper sauce

How to Make

  • Step 1: Heat the oil in a 10-inch skillet over medium-high heat. Add the celery, bell pepper and garlic, then cook stirring until the vegetables are tender.

  • Step 2: Stir the broth, green chiles and tomato paste in the skillet and heat to a boil. Reduce the heat to low. Stir in the chicken, rice and sausage. Cover and cook for 10 minutes or until the rice is tender. Add salt and pepper.

  • Step 3: Stir in the cilantro. Serve with the hot pepper sauce, if desired.
