  • The following recipe serves 6 people.

Ingredients

The ingredients are:
  • Melted butter (about 3/4 cup)
  • 1 tablespoon garlic powder (optional)
  • 2 to 4 teaspoons Dijon mustard (optional)
  • FOR DRY COATING
  • 1 cup crushed saltine cracker crumbs (not Ritz crackers! I use Christie's brand Premium Plus saltine crackers)
  • 1 cup dry breadcrumbs (unseasoned)
  • 1/4 cup all-purpose flour
  • 1/4 cup yellow cornmeal
  • 1 tablespoon garlic powder (love garlic? then add a few teaspoons more, the more the better!)
  • 1 teaspoon dried Italian seasoning (rubbed between fingers to release the flavors)
  • 1 1/2 teaspoons ground black pepper
  • 2 teaspoons paprika
  • 2 to 4 teaspoons taco seasoning mix (my own recipe posted here on Recipezazz see link on recipe heading)
  • 2 teaspoons seasoning salt
  • Cayenne (optional and to taste)
We recommend you get your ingredients ready before you start cooking. Once you're ready, here are the steps to making this delicious recipe

How to Make

  • Step 1: In a shallow bowl combine melted butter, garlic powder and Dijon mustard; whisk very well to combine

  • Step 2: In another bowl combine all breading ingredients (remove about half to another small bowl to add in as needed).

  • Step 3: Dip the chicken one piece at a time into the melted butter turning a few times to coat generously, then coat in the breading mixture pressing down firmly with hands to adhere the coating to the chicken (you may need to turn the chicken breast a few time to coat well).

  • Step 4: Place on greased baking sheet.

  • Step 5: Continue with remaining chicken adding in more breading to the bowl as needed to coat the chicken.

  • Step 6: I baked the thighs at 375 degrees F for 40 minutes, your baking time will vary slightly depending on what cut of chicken you use, remember the chicken continues cooking even after you remove it from the oven.
