Ingredients

The ingredients are:
  • FOR THE SALAD
  • 6 basil leaves, slivered
  • Salt, to taste
  • 1 bunch chives, chopped
  • 2 ounces virgin olive oil
  • 1 ounce champagne vinegar
  • 6 plum tomatoes, chopped
  • Fresh ground black pepper
  • 2 mangoes, pitted and sliced
  • FOR THE RUB
  • 2 whole nutmegs, freshly grated
  • 2 cinnamon sticks
  • 1/2 ounce whole cloves
  • 1/2 ounce fennel seed
  • 1/2 ounce black peppercorns
  • 4 thick tuna steaks

How to Make

  • FOR THE SALAD:

  • Step 1: Combine all ingredients and allow to marinate in the refrigerator for 4 hours.

  • Step 2: Meanwhile, prepare the rub:

  • FOR THE RUB:

  • Step 3: Place the cinnamon sticks, cloves, fennel seeds and peppercorns in a spice grinder or coffee grinder. Process until finely ground.

  • Step 4: Add the freshly grated nutmeg and combine well.

  • FOR THE FISH:

  • Step 5: Coat the fish with the spice rub and pan sear to rare or medium rare.

  • Step 6: Serve immediately, with the mango salad on top and alongside.
