Ingredients

The ingredients are:
  • 2 1/4 ups oatmeal
  • 2 cups coconut, shredded
  • 1 1/2 cups flour (I always mix whole wheat flour with regular flour in the flour bin)
  • 3/4 cup sugar (if using unsweetened coconut you may want to increase sugar amount)
  • 1/3 cup boiling water
  • 1 1/2 teaspoons baking soda
  • 10 1/2 tablespoons butter, unsalted
  • 3 tablespoons maple syrup (pure maple syrup and not pancake syrup)

How to Make

  • Step 1: Preheat oven to 350 degrees F.

  • Step 2: Cover baking sheets with parchment paper.

  • Step 3: In a large bowl whisk dry ingredients together (oatmeal - sugar). Set aside.

  • Step 4: In a large measuring cup or bowl combine boiling water and baking soda. Set aside.

  • Step 5: In a saucepan over medium heat melt butter and syrup together. Stir into the water mixture.

  • Step 6: Stir wet ingredients into the dry ingredients.

  • Step 7: Drop dough by spoonfuls onto baking sheets.

  • Step 8: Bake for 15-20 minutes.
