Ingredients

The ingredients are:
  • 1 1/2 cups couscous (dry)
  • 1 tablespoon unsalted butter
  • 1 1/2 cups water (boiling)
  • 1/4 cup yogurt (plain)
  • 1/4 cup olive oil
  • 1 teaspoon white wine vinegar
  • 1 teaspoon curry powder
  • 1/4 teaspoon ground turmeric
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon fresh ground pepper
  • 1/2 cup grated carrot
  • 1/2 cup minced parsley
  • 1/2 cup raisins (dried, or 1/2 cup cranberries)
  • 1/4 cup sliced almonds
  • 2 scallions, thinly sliced
  • 1/4 cup diced red onion (small diced)

How to Make

  • Step 1: Pour couscous in a large bowl. Melt butter in the boiling water and pour over couscous.

  • Step 2: Cover tightly and allow the couscous to soak for 5 minutes. Fluff with a fork.

  • Step 3: Whisk together the yogurt, olive oil, vinegar; curry powder, turmeric, salt and pepper. Pour over the fluffed couscous and mix well with a fork.

  • Step 4: Add the carrots, parsley, raisins or cranberries, almonds, scallions, and red onions.

  • Step 5: Mix well and taste for seasonings.

  • Step 6: Serve at room temperature
