Ingredients

The ingredients are:
  • 1 (3 pound) pork roast (rimmed of all fat)
  • 2 cups yellow onions, chopped
  • 1/2 cup brown sugar, packed
  • 1/4 cup white vinegar
  • 6 ounces tomato paste (small can)
  • 1 1/2 tablespoon chili powder (the hot stuff! Chipotle works well, too)
  • 1 teaspoon dry mustard
  • 2 teaspoons Worcestershire sauce
  • 1/4 cup water
  • 2 teaspoons salt
  • 3 garlic cloves (add or subtract to your heart's content)
  • Pepper, to taste
  • For Garnish
  • 8 to 12 Kaiser Rolls
  • Horseradish, to taste
  • 1 cup shredded cheddar cheese

How to Make

  • Step 1: Add all ingredients EXCEPT PORK to the slow cooker

  • Step 2: Divide pork into quarters

  • Step 3: In a heavy-bottomed pan over medium-high heat, sear pork on all sides

  • Step 4: Add the pork to the slow cooker and mix with the sauce

  • Step 5: Cook for 8 hours on low

  • Step 6: After cooking time has completed, use two forks to pull the pork apart. If you are unable to shred the pork, it isn't fully cooked yet

  • Step 7: Stir mixture to ensure all pork is evenly coated

  • Step 8: Spread horseradish on bottom half of bun, add portion of pork, and top with shredded cheddar

  • Step 9: EAT!
