Ingredients

The ingredients are:
  • 1 1/2 cups cabbage, thinly sliced (I used the food processor/slicing blade)
  • 1 1/2 cups red onions, thinly sliced (I used the food processor/slicing blade)
  • 1//4 cup vinegar
  • 1/4 cup ketchup
  • 1/4 cup brown sugar (I used spenda brown sugar blend)
  • 2 tablespoons water
  • 1 tablespoon tomato paste
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cumin, ground
  • 1 pound pork tenderloin
  • 4 whole wheat rolls (split and warmed)

How to Make

  • Step 1: In a slow cooker combine 1 cup of the cabbage, 1 cup of the onion and the next 5 ingredients (vinegar - tomato paste).

  • Step 2: In a small cup or bowl combine spices s(paprika - salt) and rub mixture over the pork and then place in slow cooker. Cover and cook for 6-8 hours. Shred meat (either on a cutting board or easier yet, use two fork and shred meat while in the slow cooker). Stir pork into the veggie/sauce mix in the slow cooker.

  • Step 3: To make sandwiches: spoon 3/4 cup pork mixture onto the bottom half of the bun, top with cabbage and onion. Cover with top. Repeat for each sandwich.
