Ingredients

The ingredients are:
  • 2 tablespoons olive oil
  • 1 pound sausage (hot Italian sausage links fully cooked then cut into 1/2 inch pieces)
  • 1 yellow onion (chopped)
  • 2 carrots, peeled and chopped
  • 1/2 pound parsnips (2 parsnips, peeled and chopped)
  • 2 celery ribs, chopped
  • 2 1/2 teaspoons Italian seasoning
  • 1 pound lentils (dry, brown)
  • 3 quarts chicken broth
  • 1 package (5 ounce) spinach leaves

How to Make

  • Step 1: In a large pot over medium high heat add the oil and then cook the sausage until browned (5 minutes), stirring occasionally. Using a slotted spoon, transfer sausage to a bowl.

  • Step 2: Stir in vegetables (onion - celery) and Italian seasoning, cooking until vegetables are soft (8-10 minutes).

  • Step 3: Stir in lentils and broth and bring to a boil, reduce heat to a simmer and cook until lentils are tender (20-30 minutes).

  • Step 4: Stir in sausage and cook another 10-15 minutes or until vegetables are tender.

  • Step 5: Season to taste with salt and pepper and stir in the spinach, cooking until spinach is wilted (3-5 minutes).
