Ingredients

The ingredients are:
  • 1/2 cup unsweetened baking cocoa
  • 1 1/2 cups flour ( gluten free plain flour)
  • 2 teaspoons baking powder (gluten free baking powder)
  • 1 cup quinoa (flakes)
  • 1/2 cup chocolate baking chips (gluten free)
  • 1 cup caster sugar
  • 200 grams butter (melted and cooled slightly)
  • 1 egg white (lightly beaten)

How to Make

  • Step 1: Preheat oven to 180c/160c fan forced.

  • Step 2: Line 2 large baking trays with baking paper.

  • Step 3: Sift the cocoa, flour and baking powder into a large bowl. Add the quinoa flakes, chocolate chips and sugar. Stir to combine, add the butter and egg white, and stir with a wooden spoon until combined.

  • Step 4: Roll level tablespoons of the mixture into balls and place 4cm apart, onto the prepared trays.

  • Step 5: Bake for 12 to 15 minutes, (swapping the trays halfway through) until just firm to touch. Stand on the trays for 5 minutes.

  • Step 6: Transfer to a wire rack to cool. Serve.
