Step 1: Preheat oven to 180c/160c fan forced.
Step 2: Line 2 large baking trays with baking paper.
Step 3: Sift the cocoa, flour and baking powder into a large bowl. Add the quinoa flakes, chocolate chips and sugar. Stir to combine, add the butter and egg white, and stir with a wooden spoon until combined.
Step 4: Roll level tablespoons of the mixture into balls and place 4cm apart, onto the prepared trays.
Step 5: Bake for 12 to 15 minutes, (swapping the trays halfway through) until just firm to touch. Stand on the trays for 5 minutes.
Step 6: Transfer to a wire rack to cool. Serve.
