Ingredients

The ingredients are:
  • 2 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1 cup butter, softened
  • 2 cups blueberries
  • 4 tablespoons granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon lemon peel, grated
  • 2 tablespoons cornstarch
  • 1/4 teaspoon salt

How to Make

  • Step 1: To make the crust: sift the dry ingredients together (flour-baking powder)in a mixing bowl. Using two knives or a pastry blender mix the butter into the flour mixture until the mixture resembles fine crumbs. With your hands press the mixture into a dough and then roll out dough into a rectangle large enough to fit a 12 x 16 inch baking sheet (the kind with sides or use a roasting pan), reserving 1/2 cup of the dough to use as a topping. Place crust in pan, patching if needed.

  • Step 2: With your fingers, form a ridge around the edge of the dough, so filling will not spill onto floor of oven.

  • Step 3: To prepare filling: in a mixing bowl combine blueberries with the remainder of the ingredients (sugar - salt) and spread filling over dough.

  • Step 4: Roll out reserved dough and roll out into a rectangle and cut into strips and place in a lattice pattern over blueberry filling -- or just crumble the remaining dough over the filling (this is what we usually do). Sprinkle with additional sugar if desired as bars are not very sweet.

  • Step 5: Bake in preheated 375 degree F oven for 25-30 minutes.

  • Step 6: Cut into squares to serve.
