Ingredients

The ingredients are:
  • SALAD
  • 1 box (8 ounce) macaroni pasta (or some other small pasta like small tubes or shells)
  • 1/2 pound bacon (cooked to really crisp and then diced)
  • 1 cup small broccoli florets
  • 1 cup cucumber, diced (seeded also)
  • 1/2 cup red bell pepper, finely diced
  • 1/2 cup sliced black olives
  • 1/4 cup red onion, finely diced
  • Salt & pepper
  • DRESSING
  • 1 cup mayonnaise
  • 2 small minced garlic cloves
  • 1 tablespoon white wine vinegar (or plain vinegar)
  • 1 teaspoon granulated sugar

How to Make

  • Step 1: Cook the pasta according to the directions on the package but don't cook until really soft I only cook to halfway. Just before the noodles are done cooking, add the broccoli to the pot. Let the broccoli boil for about 30 seconds and then drain everything into a large colander. Rinse well with cold water.

  • Step 2: Stir together the mayonnaise, minced garlic, vinegar, and sugar in a large mixing bowl. Add the cooked pasta bacon, and broccoli to the bowl and stir well to coat. Add the cucumber, pepper, and onions and stir again. Add salt and pepper then taste and adjust seasonings, if needed.

  • Step 3: Cover and refrigerate until ready to serve. Stir again just before serving.
