Step 1: Melt the butter in a large heavy-bottomed sauté pan over medium high heat. Add the thyme, apples and cook, stirring occasionally, for 5 minutes, or until softened.
Step 2: Sprinkle with sugar, cinnamon and ginger and cook over medium heat, stirring occasionally, until tender, about 5 to 10 minutes. Add the lemon juice and stir to combine. Taste and adjust for seasoning with in salt and pepper.
