Ingredients

The ingredients are:
  • 12 ounces dry bucatini pasta (spaghetti or linguini would be a good substitute)
  • SAUCE
  • 1 medium onion, rough chopped
  • 2 garlic cloves, chopped
  • 1 jar (12 ounce) roasted red peppers (drained and rough chopped)
  • 1/2 cup milk
  • 1/2 cup heavy cream
  • 4 ounces goat cheese, crumbled
  • 1/2 cup parmesan cheese, grated (the real stuff fresh grated, if possible)
  • 1/8 cup vodka (or white wine, optional)
  • 1/4 cup fresh basil, chopped (or torn)
  • Red pepper flakes
  • Pepper to taste
  • 2 tablespoons oil (olive oil)
  • Garnish
  • Extra parmesan cheese, grated
We recommend you get your ingredients ready before you start cooking. Once you're ready, here are the steps to making this delicious recipe

How to Make

  • Step 1: Sauce Base ... Add the onions, garlic, and roasted red peppers to a small food processor, and puree until smooth. Then, bring a medium size pot up to medium heat, add the olive oil, pureed onion garlic red pepper mix, and red pepper flakes. Saute the vegetables for 3-4 minutes. And, keep an eye on them, you do not want them to burn.

  • Step 2: Pasta ... Start your pasta, as the sauce finishes up. Bring a large pot of generously salted water up to a boil, add the pasta, reduce the heat slightly; and, cook according to package directions.

  • Step 3: Sauce ... Add the milk, cream, (optional white wine or vodka), goat cheese, and parmesan; cook until all the ingredients are heated through, the cheese is melted, and the sauce is creamy (about 5-10 minutes). It's done!

  • Step 4: Finish ... Drain your pasta; always reserving some of the pasta water (about 1/2 cup); and, return the pasta to the pot. Then, simply add the sauce to the pasta and toss. Now, just in case I want to thin out the sauce a bit; add a little of the pasta water - completely optional. Add the fresh basil and transfer to a serving bowl.

  • Step 5: Serve and ENJOY! Garnish with extra parmesan if you like. A fresh garden salad would be a perfect side dish. A perfect meatless Monday dish! But, this also makes a fantastic side dish as well; so, serve with your favorite protein.
