Ingredients

  • 1 1/2 to 2 pounds ground beef
  • 4 ounces yellow onion (diced, 1/2 medium onion)
  • 2 cloves garlic, minced
  • 2 cups enchilada sauce
  • 2 cups shredded Monterey Jack cheese (or 2 cups Cheddar cheese)
  • Sour cream, optional
  • Tortilla chips, optional

How to Make

  • Step 1: Brown ground beef in a large skillet. Drain.

  • Step 2: Add in onion and garlic, and cook until tender, about 3 minutes.

  • Step 3: Stir in Enchilada sauce and top with grated cheese.

  • Step 4: Cover, and allow cheese to melt, about 3 more minutes.

  • Step 5: Top with sour cream, and serve with tortilla chips.
