Ingredients

The ingredients are:
  • STEAK & ONIONS
  • 2 pounds beef steak (skirt steak)
  • 1 large yellow onion (sliced)
  • 1 tablespoon maple syrup
  • Kosher salt to taste
  • Pepper to taste
  • Olive oil
  • STEAK MARINADE
  • 2 chipotles (in adobo, minced)
  • Adobo sauce (3 teaspoons, right from the can)
  • 2 garlic cloves, minced
  • 1 whole orange (juiced)
  • 1 tablespoon honey
  • 1/2 tablespoon red wine vinegar
  • 1 tablespoon oil (olive oil)
  • SWEET POTATOES
  • 3 pounds sweet potatoes (peeled and cut into 1-inch cubes)
  • 1/3 to 1/2 cup half and half
  • 1 to 2 whole oranges (juiced, you want 3 tablespoons for the potatoes; reserve 1 tablespoon for the vinaigrette)
  • 1 tablespoon maple syrup (the real stuff if possible)
  • 4 to 4 tablespoons butter, softened
  • Kosher salt to taste
  • Pepper to taste
  • MIXED GREENS
  • 6 cups mixed greens (baby greens, I happen to love kale, arugula, or watercress)
  • 1 tablespoon balsamic vinegar
  • 3 tablespoons oil (olive oil)
  • 1 tablespoon orange juice (reserved from the orange juiced for the sweet potatoes)
  • Salt to taste
  • Pepper to taste
We recommend you get your ingredients ready before you start cooking. Once you're ready, here are the steps to making this delicious recipe

How to Make

  • Step 1: Steak Marinade ... Add all the ingredients to a large bowl or ziploc bag and mix to combine. I prefer the 'bag' - just close and shake; and, no clean up. Add the steak, and either cover with plastic wrap (using a bowl), or close the bag. Marinate at least 2 hours - up to 8 hours. I prefer all day if possible.

  • Step 2: Dressing ... Also, best if made ahead. Mix the oil, vinegar, orange juice, and season with salt and pepper. It's a simple quick dressing.

  • Step 3: Sweet Potatoes ... These can also be made ahead, and reheated. Cook the potatoes in plenty of salted water until tender. Then, add half of the butter, cream, orange juice, maple syrup, salt and pepper; and mix to combine. I like to use a potato masher. I also like to start with a bit 'less' of everything - because, you can always add more to taste. Once everything is mashed; add more to develop the flavor you like. And, don't forget to season to taste with salt and pepper. I have found; some love these very creamy and sweet - whereas, I like them a bit less sweet, and not as creamy. So make sure to make them your own. These also can be made well in advance; they reheat well in the microwave, or on the stove top. Simply keep the potatoes in the pot covered; or wrap with plastic wrap to keep warm.

  • Step 4: Steak ... Inside, a grill pan - or Outside, on the grill. First, make sure to remove the steak from the marinade; then, let it come to room temperature. Season with steak with salt and pepper; and brush your grill with oil. Grill the steak on medium high heat, until the steak is done to your liking - I prefer medium rare. Note, once you put the steak down - let it cook; you want to get a nice crust on the first side before flipping. When the steak is done; transfer to a plate and cover with foil to rest before slicing. Skirt steak can cook in as little as 3-4 minutes per side, depending on the thickness - so, keep an eye on it.

  • Step 5: Onions ... As the steak is resting, grill the onions. Lightly brush the onions with the maple syrup, and grill a few minutes on each side until golden brown and slightly tender.

  • Step 6: Salad ... Simply toss the greens with the dressing. Dress the salad with as much dressing as you like; I tend to dress mine very lightly.

  • Step 7: Plate, Serve, and ENJOY! ... After the steak has rested, slice, and plate. Add the creamy potatoes to the serving platter, top with the sliced steak, onion slices; and, finish with the dressed greens. A one plate meal. Finish with fresh fruit for an elegant and simple dinner.
