Ingredients

The ingredients are:
  • 2 large eggs
  • 1 cup milk
  • 1/2 cup water (may need a few tablespoons more to thin batter)
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 3/4 to 1 teaspoon ground cinnamon
  • Oil, for frying
  • Confectioners' sugar

How to Make

  • Step 1: In a small bowl combine flour with baking powder, salt and cinnamon.

  • Step 2: In a medium or large bowl whisk eggs until well combined; whisk in milk and water. Add the flour mixture to the wet mixture; whisk vigorously until smooth (do a quick test to see if the batter flows through the hole of the funnel easily, if not add a small amount of water and whisk until smooth, no more than 3 tablespoons of water should be used).

  • Step 3: Heat 2-inches of oil in a large skillet over medium-high heat (make sure you have more oil handy to add to the skillet if needed).

  • Step 4: Holding your finger tightly over the funnel hole, using a ladle scoop a SCANT 3/4-cup batter into the funnel.

  • Step 5: Remove your finger from the funnel hole and drizzle the batter into the hot oil making weaving patterns. Cook until browned (about 45 seconds, depending on how hot your oil is). Working two spatulas turn the funnel cake over and continue cooking until browned (another 45 seconds). Remove to a plate and continue with remaining batter.

  • Step 6: Serve cakes dusted with confectioners' sugar. YUMMM!
