Ingredients

The ingredients are:
  • 2 cups fresh parsley leaves
  • 3 scallions (green onions, white and green parts), sliced
  • 1/2 cup fresh dill sprigs
  • 3 anchovy fillets (drained)
  • 3 garlic cloves, roughly chopped
  • 1 tablespoon capers, drained
  • 6 tablespoons fresh lemon juice
  • 3/4 cup oil (olive oil)
  • Salt and freshly ground black pepper, to taste
  • 2 hard-cooked eggs, finely chopped

How to Make

  • Step 1: Place parsley, dill and scallions in the bowl of your food processor. Give it a whir until all is evenly chopped.

  • Step 2: Add the anchovies, garlic, capers, and lemon, then whir a bit more until smooth.

  • Step 3: With the machine running, slowly pour in the olive oil until fully incorporated.

  • Step 4: Remove the sauce into a bowl and stir in the chopped eggs. Season with salt and pepper to taste.

  • Makes 1 1/2 cups of sauce
