  • The following recipe serves 4 people.

Ingredients

The ingredients are:
  • 4 bread rolls (split in half, I prefer a hearty ciabatta bread, cut in 4 sandwich size)
  • 8 to 16 lettuce leaves (pieces of soft lettuce, bibb or boston)
  • 3/4 cup pimento cheese (12 tablespoons, store bought or homemade; see #9450, here on RecipeZazz)
  • 12 to 16 bacon slices (3-4 per sandwich hickory or smoked bacon, cooked)
  • FRIED GREEN TOMATOES
  • 3 to 4 green tomatoes (12 slices, 3 per sandwich), sliced 1/3 inch thick
  • 1/2 cup corn starch
  • 1 cup all-purpose flour
  • 1 cup panko bread crumbs
  • 2 large eggs, beaten
  • 1 teaspoon hot sauce
  • 1 1/2 teaspoons garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon kosher salt
  • 1/4 fresh ground pepper
  • Vegetable or canola oil to fry

How to Make

  • Step 1: Bacon ... Prepare your bacon with whatever method you prefer. I prefer to bake bacon; it comes out very flat, without splatter. But use any method you are comfortable will work.

  • Step 2: Bread ... I prefer a ciabatta bread split in half; but, use any bread you like. I think the heartier, thicker bread works much better with this sandwich. Also, I like to lightly toast the cut side of the bread; but, it isn't necessary - just a personal preference.

  • Step 3: Green Tomatoes ... Note: If you can find green tomatoes in your 'regular' grocery store. Try a Whole Foods or Nutritional Market; or, a Mexican or Ethnic market. The first thing I like to do, is set the cut tomatoes on a paper towel - just to dry them off a bit. It only takes a minute or two - Then, set up a breading station.

  • Step 4: Breading Station ... 1) corn starch, 2) beaten eggs and hot sauce, and; 3) the seasoned bread crumbs. Mix the panko, flour, garlic powder, paprika, salt, and pepper to a flat pie pan, or shallow dish; and mix to combine.

  • Step 5: Dip the tomatoes which have dried a bit in the corn starch; shaking off as much as possible. Then, into the egg mixture; and finally, into the panko/flour mix - pressing down to coat the tomatoes on both sides. Set the tomatoes off to the side on a plate for 5-10 minutes before frying.

  • Step 6: Frying ... Bring a large saute pan (non-stick preferred) up to medium high heat; and, add the oil - I prefer a neutral oil, not olive oil. Add the tomatoes, and saute on each side, until golden brown. About 1 1/2-2 minutes per side, is all they take. Then, transfer to a plate lined with a paper towel to drain.

  • Step 7: Sandwich ... Spread the pimento cheese (1-1 1/2 tablespoons) on the bottom roll. Top with a 1-2 lettuce leaves (depending on the size), 3 fried tomatoes, 3-4 slices of bacon, lettuce; and finish with the top bread spread with more pimento cheese.

  • Step 8: Serve and ENJOY! ... Add a toothpick in each half; and cut from corner to corner. Perfect with sweet potato fries or salad, home made pickles; or your favorite potato chips.
