  • The following recipe serves 1-2 people.

Ingredients

The ingredients are:
  • STARTER
  • 1 pound Italian sausage links (casings removed, spicy or sweet, I use spicy, you can use more than one pound if you want -- DO NOT omit the sausage, it's what makes this sauce!)
  • Olive oil (a little to brown the sausage meat, then enough to generously coat the bottom of the pot for onions)
  • 2 medium yellow onion, chopped
  • 3 tablespoons dried oregano
  • 2 tablespoons dried basil
  • 2 extra-large bay leaves (or 3 medium)
  • 3 tablespoons chopped fresh garlic
  • 1/2 can (13 ounce) tomato paste
  • 1 cup dry red wine (DO NOT OMIT!!!)
  • 1 tablespoon coarse salt
  • 1 teaspoon crushed red pepper flakes (optional)
  • 2 teaspoons fresh ground black pepper

How to Make

  • Step 1: In a saucepan (use a 6-quart or larger if making the complete pasta sauce recipe) heat a small amount of oil. Add in sausage meat; cook stirring constantly over medium-high heat until browned. Remove to a bowl; set aside.

  • Step 2: Add in enough oil to coat the bottom of your pot. Heat oil, then add in onions, oregano and basil; cook stirring over medium heat for about 5 minutes or until softened. Add in garlic and bay leaves; cook 3 minutes stirring constantly.

  • Step 3: Add in tomato paste; cook stirring 2 minutes.

  • Step 4: Add in the cooked sausage meat and the wine, salt, pepper flakes and pepper; bring to a light simmer, then simmer over low heat for 10-15 minutes, stirring frequently.

  • Step 5: Use right away for a large pot of sauce or divide and freeze for smaller amount of sauce.

  • Step 6: When ready to use just defrost in the microwave or thaw in the fridge.
