Ingredients

The ingredients are:
  • 1 1/4 pound Italian sausage (casings removed & crumbled)
  • 1 cup onion, chopped
  • 1 zucchini, halved & sliced
  • 1 to 1 1/2 ounce edamame (optional)
  • 1 can (28 ounce) stewed tomatoes
  • 1 teaspoon oregano
  • 6 to 7 ounces tortellini pasta (thawed)
  • 1/4 cup parmesan cheese, grated (divided)

How to Make

  • Step 1: Preheat oven to 375°F

  • Step 2: In large skillet, over medium heat, brown meat till cooked.

  • Step 3: Drain excess fat & set aside.

  • Step 4: Sauté zucchini & onion for 3 minutes.

  • Step 5: Stir in tomatoes & oregano; return meat into saucepan.

  • Step 6: Bring to a boil, stirring for 1 min.

  • Step 7: Pour over uncooked tortellini into a lightly greased casserole, with cover.

  • Step 8: Sprinkle with 1/2 of the parmesan cheese.

  • Step 9: Cover & bake for 10 minutes.

  • Step 10: Stir casserole, sprinkle until pasta is tender.

  • Step 11: Serve with garlic texas toast.
