Ingredients

The ingredients are:
  • 2 cans (15 ounces each) garbanzo beans (rinsed and drained)
  • 1 cucumber (diced, not peeled, about 2 cups)
  • 1 yellow bell pepper (diced, about 1 1/2 cups)
  • 1/2 cup red onion (diced)
  • 1 cup carrot (peeled and diced, about 2 medium)
  • 1 pint grape tomatoes (halved)
  • 3 cloves garlic (minced)
  • DRESSING
  • 1/4 cup white balsamic vinegar
  • 1/4 cup oil (extra-virgin olive oil)
  • 1/2 teaspoon garlic salt with parsley
  • 1/2 teaspoon black pepper
  • 1/2 tablespoon agave nectar (or honey)
  • 1 1/2 teaspoons dried basil

How to Make

  • Step 1: Place all vegetables in a large bowl and stir to combine well.

  • Step 2: In a small bowl or measuring cup, whisk together dressing ingredients.

  • Step 3: Keeping dressing and vegetables separate, cover and refrigerate at least four hours (I do it overnight, but you don't have to wait that long).

  • Step 4: Just before serving, add dressing to vegetables and mix well to coat.
