Step 1: Mix together the potato flakes, parmesan, thyme, sage and pepper in a large plastic bag.
Step 2: Place butter in a shallow dish.
Step 3: Dip chicken pieces in butter, and then toss them in the dry mixture.
Step 4: Shake bag well to make sure the chicken pieces are well coated.
Step 5: Coat a rimmed baking sheet with non-stick spray.
Step 6: Place breaded chicken pieces on baking sheet.
Step 7: Bake uncovered in a 375 degree Fahrenheit oven for about 1 hour, until juices run clear.
