Ingredients

The ingredients are:
  • 1/4 cup butter
  • 1/2 teaspoon dried chipotle chile pepper
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon fresh ground black pepper
  • 3 cups whole milk (plus 2 tablespoons)
  • 1 teaspoon onion powder
  • 8 ounces dried macaroni pasta (do not cook, it will cook in the milk)
  • 2 to 3 cups broccoli florets (lightly steamed)
  • 12 ounces old cheddar cheese, shredded (divided)
  • 2 tablespoons all-purpose flour

How to Make

  • Step 1: In a large skillet over medium high; add butter, chipotle pepper, salt and pepper. Stir to combine. Add 3 cups of whole milk and onion powder; bring to a simmer over medium heat. Once milk starts bubbling add the dry macaroni. Allow to simmer for 4-5 minutes, until pasta is almost cooked though, stirring occasionally.

  • Step 2: Mix in broccoli and 8 ounces of cheddar cheese; bring back to a simmer and cook for 2 minutes.

  • Step 3: Meanwhile in a small bowl, whisk together 2 tablespoons milk and 2 tablespoons of flour until smooth. Add to macaroni mixture. Cook until thickened.

  • Step 4: Sprinkle with remaining 4 ounces of cheddar cheese.

  • Step 5: Preheat oven to broil. Place skillet under broiler for 2-4 minutes until cheese is melted.
