Ingredients

  • 2 1/2 cups whole wheat flour
  • 1 1/2 cups flour (unbleached)
  • 1 teaspoon salt
  • 1 tablespoon baking powder
  • 1 teaspoon baking soda
  • 1/4 cup granulated sugar (optional)
  • 1/8 teaspoon cardamom (or coriander)
  • 1/4 cup butter
  • 1 large egg (room temperature)
  • 1 3/4 cup buttermilk (room temperature)
  • 1 1/2 cups currants

How to Make

  • Step 1: Preheat oven to 375F; grease two 8-inch round pans.

  • Step 2: Combine dry ingredients, then cut in butter with a pastry blender or two knives until coarse crumbs form.

  • Step 3: Whisk egg and buttermilk together; add to dry ingredients and mix until well blended.

  • Step 4: Add currants and stir to thoroughly combine.

  • Step 5: Turn out onto floured surface and knead gently for 3 minutes, until dough is smooth.

  • Step 6: Divide dough in half and shape each into a ball.

  • Step 7: Press each half into a prepared pan, pressing down until it fills to the edges.

  • Step 8: Using a sharp knife, cut a 1/2-inch-deep cross in the top of each loaf.

  • Step 9: Bake at 375F for 40 minutes, or until bread sounds hollow when thumped with your knuckles.

  • Step 10: Turn out onto wire rack to cool; leave alone for at least four hours before cutting.
