Step 1: Preheat oven to 375F; grease two 8-inch round pans.
Step 2: Combine dry ingredients, then cut in butter with a pastry blender or two knives until coarse crumbs form.
Step 3: Whisk egg and buttermilk together; add to dry ingredients and mix until well blended.
Step 4: Add currants and stir to thoroughly combine.
Step 5: Turn out onto floured surface and knead gently for 3 minutes, until dough is smooth.
Step 6: Divide dough in half and shape each into a ball.
Step 7: Press each half into a prepared pan, pressing down until it fills to the edges.
Step 8: Using a sharp knife, cut a 1/2-inch-deep cross in the top of each loaf.
Step 9: Bake at 375F for 40 minutes, or until bread sounds hollow when thumped with your knuckles.
Step 10: Turn out onto wire rack to cool; leave alone for at least four hours before cutting.
