Step 1: Place pancake mix, water, and sugar in a medium bowl and stir until combined.
Step 2: Melt the 1/2 cup chocolate in the microwave or over a double boiler, add about a quarter cup of dry batter to the melted chocolate to temper it, otherwise the chocolate will seize if you place it directly into the batter. Add remaining melted chocolate to dry batter and mix until combined (do not over mix). Mix in 1/2 cup chocolate chips.
Step 3: Coat a non-stick skillet with cooking spray at medium high.
Step 4: Cook each pancake for about 1 1/2 minutes per side.
