Ingredients

The ingredients are:
  • 1 cauliflower head, cut in to bite size pieces
  • 1/2 small red bell pepper, small diced
  • 1/2 small green bell pepper, small diced
  • 1 small onion, small diced
  • 2 small celery ribs, cut lengthwise and small diced (save the leaves for a garnish)
  • 3/4 cup Swiss cheese, grated (you can always use your favorite)
  • 1/2 to 3/4 teaspoons Italian seasoning
  • Pinch red pepper flakes
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 teaspoons butter
  • 1 tablespoon water

How to Make

  • Step 1: Vegetables ... Add the cauliflower to a 'microwave safe' casserole dish. Then, top with the celery, peppers, onion, water, seasoning, salt, and pepper; and cover with plastic wrap.

  • Step 2: Microwave ... On high heat for 5 minutes. Remove, uncover, and stir to combine. Cover again, and cook until tender. The time is difficult to pinpoint depending on the size of the cauliflower head, type of dish; and, the individual microwave. normally, it takes around 7-10 minutes for the cauliflower to be tender.

  • Step 3: Finish ... Remove once again, add the butter and mix to combine, and top with the cheese; and, cook uncovered another minute or two until the cheese is melted. Add as much butter as you want; I tend to only use 1 teaspoon; but, if you are a butter lover, add a bit more.

  • Step 4: Serve and ENJOY! ... This goes with any of your favorite dishes. And, as said ... it isn't gourmet or fancy; but, it is delicious!
