Step 1: BBQ Sauce ... Add all the ingredients to a small sauce pan and heat to medium high. Bring to a light boil and then reduce to a simmer, cook 5 minutes and turn off the heat. Add to a small bowl or container until ready to use. This makes a bit more than you need, so just refrigerate the extra - it will last about 1 week in the refrigerator.
Step 2: Seafood and Vegetables ... Remove the seafood and vegetables from the refrigerator to take the chill off. Skewer the seafood and vegetables any way you want - there is no right or wrong. Brush the skewers with olive oil and season well with salt and pepper.
Step 3: Grill ... Add the skewers to a medium heat grill and brush immediately with the BBQ sauce. Rotate often and brush with the BBQ sauce. It will take around 10-15 minutes depending on what type of seafood and vegetables you are using. It cooks quick, so keep an eye on them. NOTE: These could also be broiled. Obviously it is best on a grill (inside or outside), but they can be broiled.
Step 4: Serve ... White rice is perfect on the side and maybe some fruit. Garnish the kabobs with the scallions and ENJOY!
